Spicing up 2014 with Chicken Curry

Spicy Indian Chicken Curry

2 tbsp coconut oil
2 chicken breasts, cut into bite-sized pieces
1 28oz can crushed tomatoes
2-3 cloves garlic, minced
1 yellow onion, chopped
1 cup broccoli florets
1/2 cup peas
any of your other favorite vegetables you’d like to include! I threw in a red bell pepper I needed to use up.
1 cup plain yogurt (I used nonfat but feel free to use lowfat, Greek, etc.)
1 tsp garam masala
1 tsp powdered ginger
1 tsp cumin
1 tsp tumeric
1 tsp coriander
1/2 tbsp cayenne (or less, if you don’t like it as spicy)
2 tbsp curry powder

Serve your curry over a scoop of jasmine rice with a piece of Stonefire naan on the side!
